<p>Serves 8</p>
<h3>Chicken Skewer Ingredients:</h3>
<ul>
<li>2 lbs boneless skinless chicken breast (about 5 medium breasts)</p>
<li>1/4 cup light brown sugar, packed
<li>2 tablespoons fresh cilantro leaves, minced
<li>1 chipotle chile in adobo, minced
<li>2 teaspoons adobo sauce
<li>1 1/2 teaspoons salt
<li>1/2 teaspoon chili powder
<li>1/4 teaspoon garlic powder
<li>1/4 teaspoon ground black pepper
<li>nonstick cooking spray</ul>

<li>1/4 cup rice wine vinegar</p>
<li>2 tablespoons fish sauce
<li>1/4 cup hot water
<li>2 tablespoons sugar
<li>1 lime, juiced
<li>1 teaspoon minced garlic
<li>1 teaspoon red chili paste, such as sambal
</ul>
<h3>Method:</h3>
<p>In a blender, puree the rice wine vinegar, fish sauce, hot water, sugar, lime juice, garlic, and chili paste until combined. Pour into a small bowl to serve with the chicken skewers.</p>
